Here is what I made last night. The photos are not great because… well it was dark outside and I was in a hurry. I wanted to share it anyways, because it was quick, easy and delicious!
Tri-Colored Quinoa, Chestnut, Walnut “Stuffing” with Gravy and in the background, Apple Roasted Brussel Sprouts
This quinoa stuffing was a first for me, but it is actually very similar to my Chestnut Loaf. I love the flavors of that loaf, so I figured it would work in a quinoa base.
The brussel sprouts? Couldn’t be easier… (well except for all of the cutting) simply put them on a baking pan lined with parchment paper, pour 1/4 c apple juice over them and whatever seasonings you like and roast at 400 F until done! Simple and delicious!
Quinoa Stuffing: (if you do not have all of those fresh herbs on hand, just use your favorite stuffing dried herb blend)
- 2 c cooked quinoa (make sure to rinse before cooking)
- 1/2 c chopped roasted chestnuts (you can often find them vacuum packed)
- 1/2 c chopped toasted walnuts
- 1/4 c chopped onion
- 1/2 c finely chopped celery
- 1 clove garlic minced
- 1/4 c fresh parsley
- 1 T fresh thyme
- 1 T fresh chopped sage
- 1 T tamari (or salt to taste)
- 3 T nutritional yeast
- 1/2 c plus more for serving of Gravy
Dry saute the onion in a pan until beginning to brown (about 3 min), next add the celery and garlic and about 1/4 c water. Turn down the heat to medium and cover for about 5 min or until the celery is tender. Add all remaining ingredients including 1/2 c (or more) of the gravy. The mixture should be moist, if not, add more gravy. Serve with gravy and chopped walnuts if desired!
