Here is a guest post recipe by Rachna Parmar. I love Indian food and know from experience that what makes the dish is the spice mixture! In Indian food there are so many different spice combinations, Garam Masala is a common spice mixture that can be found in most grocery stores.
Mushroom Veg Masala
This tangy, spicy recipe is easy to rustle and is extremely healthy. You can have it with rotis or boiled rice. It is a favorite at my home, and we eat is every week.
Serves 4
Cooking time: 15 minutes
Preparation time: 10 minutes
Ingredients:
½ lb. button mushrooms (You may use shitaki mushrooms for a more earthy flavor) chopped chunkily
1 large green pepper, sliced
Half-cup fresh or frozen peas
1 large onion sliced
1 tsp. garlic paste
1 tsp. ginger paste
2 tsp. tomato puree
1 tsp. cashew powder (just powder the nuts in a food processor)
1 tsp. garam masala powder
½ tsp. cayenne (optional)
½ tsp. coriander powder
½ tsp. cumin seeds
½ tsp. turmeric powder
Salt to taste
2 tsp. oil
Coriander leaves for garnish
Method:
Heat oil in a non-stick pan or skillet. Add cumin seeds, and let them sputter. Now add the ginger-garlic paste and cook for a couple of minutes. Put in the sliced onion and cook till the onions turn translucent. Now add in the tomato puree, garam masala, coriander powder, turmeric, cayenne (optional) and salt to taste. Cook until oil separates from the mixture. Add ½ cup water. We don’t want this very watery. Add the cashew powder and stir well. Cook for a couple of minutes. Add chopped mushrooms, sliced peppers, and peas. If you are using frozen peas, thaw them before adding. Cook covered on medium heat for 4-5 minutes. The veggies should have a bite and not be mushy. Taste and adjust seasoning. Garnish with coriander leaves and serve hot.

Hi Rachna JI!
My wife is a caeliac and can only eat Gluten Free food. Do you have any special receipes as she cannot eat any wheat product sush as bread, cakes, biscuits and etc…

I love the combination of spices in this dish. I am a vegetarian who recently has had to cut out eggs and dairy , so I am loving this vegan recipe.
