Banana Ice Cream and Nut Balls


I recently got back from visiting family in Colorado. I had such a good time making lots of goodies for my nieces. They are both very good eaters and appreciate healthy food.



Don’t let the angelic faces fool you though… these girlies are quite mischievous!

Like most siblings, they love to annoy each other!

Here I caught them in action:

Two favorite things I made was nut balls and banana ice cream.

This banana ice cream is scoop-able straight from the freezer!

Their favorite is the carob of course!


2 frozen bananas chopped into 1/2 in pieces

2 T nut butter (any kind you like)

2-3 T non-dairy milk (if needed)

optional: vanilla, maple, carob, etc.

You will need a food processor for this. First let you bananas sit out for about 5 mins to soften slightly, then process the bananas until you have a creamy consistency. Add the nut butter and whatever flavorings (if using) and process. Add the milk only if mixture is too thick. You can either eat it as a soft serve, or freeze it until desired consistency. If you freeze it, you have to stir it every hour so it freezes evenly. Because of the fat content, this ice cream does not freeze solid!

Another favorit were nut balls:

These ones were cookie dough nut balls. There are so many different kinds you can make! I made: banana bread, cherry pie, maple pecan, cinnimin raisin, lemon drop… the possibilites are endless!

The basic recipe:

1/2 c oats

1/2 c nuts

1/2-3/4 c dried fruit (depending on the sweetness of the fruit)

optional: flavorings

First process the oats and nuts until they are like flour (or you can do this step in the blender), then add the dried fruit and flavorings if using and process. Form into balls and store in the fridge or we liked them in the freezer!

Banana bread balls:

2/3 c chopped dehydrated banana

1/2 c walnuts

1/2 c oats

1/4 t cinnamon

1 t vanilla

Lemon Drop:

2/3 c raisins or dates

1/2 c oats

1/2 c almonds/cashews (or other neutral nut)

3 T lemon juice and zest of lemon

1 t vanilla

Maple Pecan

1/2 c white mulberries (if you can find them, these are amazing)

1/2 c oats

1/2 c pecans

1/2 t maple extract

1/4 t cinnamon
