The last couple of days here have finally begun to feel like summer! It has been in the 70s and very sunny! So we went for a walk. Our first walk outside of the city since we moved here!

With the hotter weather, summer treats have been on the menu!
Oh… and of course they include carob!
Carob/almond covered banana bites!
These are so good!
Gooey Caramel Carob Almond Cups!
White Chocolate Tahini/lucuma pecan cups! (these were amazing)
Frozen bananas on a stick? Better than you think!
For each of these treats, I used the same ratios. You will be surprised how many cups you can make out of this!
1 T almond, tahini or cashew butter
3-4 T almond milk (or other nondairy milk)
1 T date paste (dates blended with a bit of water until a paste)
1 T carob powder/lucuma powder
Mix ingredients really well. You want the “batter” to be thick like a pudding. Fill (silicone) muffin liners or dip bananas in and freeze!
For the cups, I have used both date paste and brown rice syrup for the filling. The brown rice syrup doesn’t freeze, so it stays gooey, while the date does. I also chopped almond/pecans on top of the caramel in the cups. Enjoy and let me know if you try them!

Fantastic recipes, especially the tahini cups. I made tahini banana cups recently and almost died they were so good. These looks fantastic as well! Bookmarked for sure! Love the idea of using brown rice syrup in the filling!

I know, the tahini cups really are good! The brown rice syrup doesn’t “hold up” quite as well as the date, but I think it looks more like the “real deal.”

You’ve inspired me so much with just these few recipes – which actually sound quite do-able. I need to get some carob powder – I still have not tried it!

You can sub cocoa powder if you don’t have carob (and add a bit more date paste), but I would definitely get some carob to try!
