Summer Soups!

When I arrived on Vancouver Island in January, I had just come from Mexico for Christmas and the weather here was pretty bad (but most northern territories are)! It was cloudy, rainy and cold. Although it never got that cold here (it rarely went under 32 degrees farenheit), it really did not warm up either! Not until July did we start to have summer weather. Now that the temperature is regularly staying in the 70s, it finally feels like summer. I am sure the cool weather sounds lovely next to the scorching temperatures most have been experiencing. With the warm weather comes everything else that goes with summer, like strawberriescherriesraspberries

My favorite are the gooey, squished ones! They melt in your mouth! Ah… now I want some! Luckily we just went and replenished our stash with 10 lbs worth!

Raspberries go so well with raw cashew ice cream…

Not only do they have yummy local summer fruit, but wonderful vegetables. In fact the summertime produce here is better then anywhere I have been. You can truly eat 100 percent local here!

Nothing inspires me more to cook than fresh produce. Thus I have been making different themed summer soups…

Can you guess?

This soup is so light and fresh! A must try!

Fresh Pea Mint Soup

1/2 onion chopped

2 stalks of celery

2 garlic cloves

2 cups fresh (or frozen) sweet peas

1 bay leaf

2 T fresh mint leaves

red pepper flakes (optional)

Put all into a pot, add 1/2 cup of water and cook until the onion is translucent. Blend and serve with cashew cream (soaked cashews blended with water).
